Let's Talk Planking On the Grill

Planking (cooking) outside on the grill with wood (plank), is a great way to get that essence of natural wood taste into your food. I love it because once I put the food on the grill to cook, I don't have to wait around to turn it every 6 to 10 minutes so it doesn’t burn. I just set the timer for the estimated time it will need to cook and check it later with a thermometer. The food is very moist and tender, with a touch of smoked flavor and the grill has virtually no clean-up to it. Wash the plank when you’re done and save it for the next time. REAL EASY, My wife even uses it in the oven when I can't get outside on the grill. Check it out, I'm sure you will like it.

I've heard about plank grilling. A buddy of mine told me that he liked the flavor of the meat better by cooking on the plank vs. grilling with the direct heat. He has been cooking on cedar planks now for about a year. Need to stop by and pick a couple up on the way home. Do you have the metal trays you put the plank in?

Yes, got the trays here. I really think you'll like it when you get the hang of it. Be sure to pickup a pocket meat thermometer if don't have one, they come in real handy, I couldn't cook a thing without it.

Try this nice snack on your planks.

Sweet Bacon Bites
20 pitted prunes
20 whole roasted unsalted almonds
10 slices bacon
20 plain toothpicks
1 plank soaked in apple juice or water (2hrs. min)

Soak toothpicks in juice or water. Stuff one almond into each prune. Cut uncooked bacon slices in half. Wrap bacon around prune and secure with toothpick. Place on prepared plank. Grill or bake at 400 degrees for 20-25 minutes or until bacon is crisp, and serve hot.

Or;

Substitute fried oysters for the prunes and almonds or whole water chestnuts marinated in soy sauce for the almonds (chestnuts will not fit into the prunes, place on top of the prunes and wrap with bacon.

We have one of the great plank cooking cookbooks here. It's called "The essence of Natural Wood". The book defines the process of planking, how to maintain and clean planks and lots of cooking secrets. It also has many great recipes for appetizers, vegetables, seafood, fish, beef, pork, poultry, wild game and desserts. It recommends the type of wood to use for each of the recipes, cooking times and temperatures. If you like grilling and entertaining, this book will top your list of references.

Red Potatoes with Corn

4 medium red potatoes
2 green onions, sliced
1 cup corn, white or yellow
1 teaspoon fresh thyme leaves
Olive oil
Salt and pepper to taste
1 plank soaked in water 3 hrs.

Wash and dry potatoes, thinly slice. Place potatoes on prepared plank, arranging slices slightly overlapping in parallel rows. Brush potatoes with olive oil. Sprinkle corn, sliced green onions and thyme over potatoes. Salt and pepper to taste. Cover with a foil tent to prevent charring. Grill or bake at 350 degrees for 35-40 minutes or until potatoes are tender. Garnish with additional green onion if desired.

Preferred Wood: Alder, maple or cherry
