Plank Cooking Red Potatoes with Corn for your Vegetable

Red Potatoes and Corn Vegetable

4 medium red potatoes
2 green onions, sliced
1 cup corn
1 teaspoon fresh thyme leaves
Olive oil
Salt & pepper to taste
1 plank soaked for 3 hrs.

Wash and dry potatoes, thinly slice. Place potatoes on prepared plank, arranging slices slightly overlapping in parallel rows. Brush potatoes with olive oil. Sprinkle corn, sliced green onions and thyme over potatoes. Salt and pepper to taste. Cover with a foil tent to prevent charring. Grill or bake at 350 degrees for 35-40 minutes or until potatoes are tender. Garnish with additional green onion if desired.

Wood preferred: Alder, maple or cherry

Variation: Any variety of potato can be used successfully in this recipe. Potatoes can be partially baked in the oven or microwave to speed up cooking time on the plank.
