Striped Salmon - Planking
5-7 lb. Salmon or fillets ***** Sundried Tomato Pesto Preparation ******* 1 4oz. jar or 1/2 cup sundried tomatoes, packed in oil 1/2 cup parmesan Cheese 1/2 cup walnuts 1/3 cup fresh parsley 4 large fresh basil leaves 2 cloves garlic 2 tblsp. olive oil Salt and pepper to taste Finely chop all ingredients in a food processor or chopper. ****** Basil Pesto ****** 1 1/2 cup loosely packed, washed basil leaves 1 1/2 teaspoon chopped garlic (or 2 small cloves) 1/4 cup toasted pine nuts 1/2 cup grated parmesan cheese 1/4 cup olive oil Salt and pepper to taste Finely chop bail in a food processor or mini-chopper. Add remaining ingredients and blend to form a paste. Lay salmon or fillets, skin side down, on a prepared plank. Spread pesto’s on fish in a striped fashion about every 3-4 inches in width (like a candy cane). Grill or bake at 350 degrees for 15-25 minutes or until fish is opaque and flakes in large chunks. Wood should be Alder, Oak or Maple Recipe Variation: Both pesto’s in this recipe are great with any type of pastas. The recipe makes enough for two large fish fillets, but if making a smaller portion, the pesto’s refrigerate will up to one week or freeze for up to 6 months. Here's to Salmon Teaspoon
